SmartRipper can get at the audio streams.  They are usually 48KHz on
DVD.  You can convert to 44.1 for CD with other software.  Most of the
audio on DVD, however, is Dolby Digital rather than PCM.  DD works in
a similar way as MP3.  If you can capture the audio directly through
the sound card -- not through a cable outside the computer, but
totally inside the computer -- that is the simplest way, like Paul
describes.  Ultimately you have to convert from the lossy (but still
nice) Dolby Digital to linear PCM.  And then it's still the wrong
sample rate for CD.  Use the best sample rate conversion you can.
That can sound really horrible when done badly.  There is a free
command-line program called SOX that is sort of a Swiss army knife for
basic audio processing, which does a fine job of sample rate
conversion with the right settings.  It's a pain to use, though, which
is the downside when you're trying to cram 1001 features into the
command line.
