the whole song is a polemic aimed at EG records. they
cross-collateralised kj's studio recording time debt from OtG, that is
to say they paid off part of that debt with revenue from other sources
(because EG was not only the record label but also the management
_and_ publishers) leaving jaz without a penny, literally unable to
feed his own family. presumably the people in question were overweight
(i remember jaz mentioning something about finding a receipt from the
butchers in their office, which explains the opening sample).

personally, i don't think the phrase "cross-collateralised
cholesterol" makes much sense, but that's the explanation.
